Using the proper timing chain cover & water pump? Serpentine turns counter-clockwise, V-belt turns clockwise. If wrong pump or mismatch w/ the cover, very poor circulation. Fan has to be correct pitch, as well.

Pop, the heads were removed. The coil along with distributor is brand new. The fan and shroud is from Derale made exactly for that radiator. Thermostat is also brand new and in correctly and new water pump. We put a serpentine system on the car. The condenser and all other ac parts/lines are all brand new. ARE you sure both head gaskets were put on correctly,,,,makes me think one is wrong,,thus blocking a steam hole.....JMO......POP

I can eat crow on that one, Pop The H.O. I worked on was counter-clockwise.
Looked up the conversion kits and they're made both ways. Really need a pic or verification what side of the belt the pulley is riding.
I was there when the gaskets were put on and it was done correctly. I started it up today and it fired right off and ran good. There has been a bit of hesitation with the carb when I take off from a dead stop.I'm afraid the condenser might be causing some air flow issues.
My money's on the wrong water pump. If the rotation can't be confirmed by model #/specs, it would be worth pulling the pump and confirming the vanes are turning the right direction to circulate the water properly. JMO
Update- Gas tank started leaking so I replaced the gas tank and fuel filter. I took the car for a drive today and after about 10 mins of driving and I stop at a stop sign...it dies. Get it cranked back up and dies again all the while the engine temp is 180. I pop the hood and it is extremely hot under the hood. I the take the breather off and it has heat/smoke roll out the top of the carb. I let it set for about 10 mins and leave the breather off....starts right up and black smoke rolls out the back. After that, runs fine and I drive it the rest of the way home. Can the heat in the engine bay be causing my carb/fuel problems?
The headers are not the issue, there are thousands of cars running un wrapped headers that do not cause the engine to get hot. Are you using a mechanical temp gauge? If you are relying on the factory dash gauge for an accurate reading chances are it is inaccurate.
You may have overheated the engine that is why it quit, after it cooled slightly it started but belched the black smoke because it was loaded up from the heat. Are you positively sure the coolant level is where it should be? Did you check the coolant flow as mentioned in a previous post? Is the thermostat opening completely? Do you have a collapsed radiator hose?
If the engine got hot enough to quit it may have damaged the rings or bearings, closely monitor the engine oil for consumption and metallic particles.

If the engine is running at a normal temp the engine compartment should not be too hot. I still do not believe that the headers radiate enough heat to cause the issue. Try installing a thermometer in the engine compartment temporarily to see what the actual temp is.

Sounds like the carb is getting hot enough to vaporize the fuel in the bowl(s). If you don't have a spacer between the carb and the manifold, you might want to install one to help insulate the carb from the heat of the engine.
If you had to replace an old tank, I'm thinking you may have some junk in the jets & the metering rods aren't seating @ idle.
One thing I don't like about Edelbrock carbs, jets are in the bottom of the bowl.
